Vino Blanco Lagar de Cervera
White Wine Lagar de Cervera with D.O. Rías Baixas. Excellent Albariño grape wine from Bodegas Lagar de Fornelos. A "very Galician" harvest due to the summer rains that helped the maruration cycle. Made on ilias, it keeps a high acidity.

It is a bright straw yellow color with greenish flashes.

Tropical aromas (mango, lychee, pineapple), sweet quince and fresh grass dominate.

It is unctuous, delicate at the entrance, gaining power in the step, fresh and with a complex and persistent retronasal.
Optimum service temperature: 10° C.
A pairing: Revuelto de bacalao.
Ingredients: 300 gr. of onion, 300 gr. of loin of cod desalted and crumbled, 6 eggs, 1 pinch of pepper, 1 sprig of parsley, some black olives, potatoes to fry cut into straw and extra virgin olive oil.
Elaboration:
- Chop the onion very small, heat enough oil in a pan and sauté it over low heat until golden.
- Add the crumbled cod and fry with the onion until all the cooking liquid has been reduced.
- Add the eggs one by one to the pan. Stir with a spoon until it is set. We can add a sprinkle with pepper. Meanwhile, fry the straw potatoes.
- Put a bed on a plate of chips and over it, the scrambled cod. Garnish with a sprig of parsley and some black olives cut into pieces.
