Tasting notes for Graham's Tawny Sweet Port Wine:

Reddish in color with terracotta-colored rims.

It has aromas of ripe fruit (cherry cherries) and nuts (walnuts, almonds), candied fruit and caramel notes.

There is a great balance between sugar and drier sensations of alcohol, the pace is silky, delicate, elegant and very persistent.
Tawny is a mixture of wines from different vintages that are refined in barrels for several years (frequently 5, 10 and 20 years). Because it is more complex in its characteristics and elaboration, it is also more expensive.
Alcoholic fermentation is interrupted by adding vinous brandy (this is what is called "encabezar" a wine) to kill the fermentation yeasts at the desired time and preserve a good level of sweetness, while raising its alcoholic volume, which is usually between 17° and 19°. Then it is raised in American oak barrels of 500 liters, an average of three years until the aromatic contribution and micro-oxygenation provided by the wood are adequate.
Optimum service temperature: 8° C.
A pairing: The Tawny is an exceptional pairing by contrast with blue cheeses and very cured cheeses: the sweetness of Porto softens the palate. Serve with a cheese board along with dates, plums, raisins, toasted almonds...
