Tasting note for Sparkling Wine Delapierre Black Label Brut:

Sight-Vinos-Covigran

Pale yellow color with golden and metallic flashes and a medium size bubble.

Nose-Vinos-Covigran

We find aromas of ripe fresh grapes, citrus fruits (orange, grapefruit), floral notes (chamomile) and notes of roasted apple and toasted bread.

Mouth-Vinos-Covigran

It has a slightly bitter entry, the carbonaceous is creamy and of moderate intensity in the mouth passage.

Optimum service temperature: 4° C.

A pairing: Ensalada cordobesa de bacalao y naranja.

Ingredients: 200 gr. of salted cod, 3 oranges, 2 onions, a drizzle of olive oil and black olives.

Elaboration:

- Remove the excess salt from the cod by wiping it with a dry cloth (if it is excessively salty, desalt it in water). Then, unstick the skin of each piece and fray the fish.

- Peel and cut the onion in fine feathers.

- Peel the oranges by cutting the ends and making a vertical cut in the orange peel and then remove the skin little by little. Cut the oranges into bite-sized cubes.

- Finally, mix the orange with the onion and the frayed cod until the two ingredients are evenly distributed.

- Add black olives with a splash of olive oil.

A fresh and delicious dish!

Codorníu is a Group in continuous innovation and evolution. Known above all for its cavas (although it also produces still wines outside and within Catalonia), it is one of the largest producers of cavas in volume in Spain.

Its original winery known as La Catedral del Cava, as well as its champagnes make up a masterpiece of Catalan modernism and were declared a National Artistic Historical Monument in 1976.
