Winery: Bodegas Marqués de Cáceres.
Tasting note: Straw yellow color, very bright and clean, it is agile and fluid cup. The nose is somewhat shy, but the Viura is not a very expressive variety. Even so, we find aromas of white fruit (apricot), grapefruit and freshly cut grass. The sensation of freshness on the nose is clear and repeated in the mouth, from the attack to the end, thanks to its citric acidity. It has a slightly bitter note at the end of mouth very elegant. A direct wine and easy to drink.
Optimum service temperature: 10°-12° C.
A pairing: Ceviche de lubina.
Ingredients: A medium-sized sea bass, an onion, a ripe tomato, an avocado, a little coriander, several limes, several radishes, extra virgin olive oil, fine salt and a few sprigs of thyme.
- Cut the sea bass in pieces and place them in a bowl. We bathe them with the juice of half a lime and let marinate half an hour.
- Next, peel avocado, onion and tomato. We cut everything into very small pieces.
- We remove the fish and drain the lime, then add it to the vegetables in a bowl and stir to mix.
- Mix the mixture with a little fine salt and olive oil and decorate with lime skin, sliced radish and thyme.
A fresh and delicious dish!
