Tasting note for White Wine Protos Verdejo:

Pale yellow color with green-lemon flashes, clean and bright.

First there are aromas of ripe white fruit (golden apple) and citrus fruits, and when shaking the glass, notes of fresh hay, fennel and cantaloupe melon.

Very fruity and floral entry into the mouth, fresh passage and an acidity that is tamed with a little bottle (it is one of those rare young whites that need a little time in the bottle) and it becomes more complex. Bitter end and elegant drink.
Optimum service temperature: 10° C.
A pairing: Ceviche de rape en su lima.
Ingredients: 500 gr. of monkfish, a shallot, 6 limes, a bunch of coriander, 2 garlics or a few drops of hot sauce, fresh bean sprouts, salt and pepper.
Elaboration:
- Cut the monkfish into cubes, discarding the central spine and place it on a large platter.
- Put salt and pepper and add the chopped coriander on top, the onion cut into very thin slices and the chopped garlic.
- Squeeze two limes on top so that the fish is well impregnated with its juice and let marinate for at least 1 hour.
- Drain the fish and cut the 4 limes removing the top part to be able to vary them from their pulp. Fill with ceviche.
