Tasting note Vinos del Paseante "La Escucha" 2021:

"La Escucha" shows a cherry color with violet hues.

It has a medium-high intensity with red fruit such as cherry, cherry, plum and floral-violet notes. It presents a spicy background of vanilla and clove. Notes of aromatic herbs.

It shows great balance, fresh and with enveloping tannins that give way to a pleasant aromatic memory of fruits and spices.
Optimum service temperature: 16º C.
A pairing: Brandada de bacalao.
Ingredients: 400 gr of desalted cod, skinned and boned, 5 cloves of garlic, olive oil, 40 ml whole milk.
Elaboration:
- Cook the peeled and filleted garlic cloves in a frying pan with oil. Heat without burning the garlic.
- Add the cod to the frying pan and leave for two or three minutes with the heat on the lowest setting, cover and leave to cook and release all the gelatine.
- Strain the cod and garlic, keeping the oil.
- Put the cod in a bowl with the milk and stir with a whisk to dissolve it all together.
- Add the reserved oil and stir with the whisk to emulsify everything until you obtain a unified cream.
