Tasting notes for White Wine Marina Alta:
Very pale yellow color and very bright, it is a wine with those cheerful notes of Moscatel de Alexandria, considered one of the "ancient" vine that has not yet undergone genetic mutations.
Subtle fruity aromas pear, compote fruits ..., bone (peach), citrus fruit (grapefruit) and white flowers, with some aniseed memories...
In the mouth there is a great balance between acidity and sugar, light, easy and at the same time with many nuances in retronasal.
Optimum service temperature: 7° C.
A pairing: Carpacio de pez mantequilla.
Ingredients: ½ kg. of finely cut butter fish for carpacio, arugula, orange peel skin, Maldon salt, pink pepper, ½ grapefruit juice, extra virgin olive oil.
Elaboration:
- The butter fish has a very delicate flavor and textures, so all the ingredients that accompany it must be soft.
- We put the fish slices in a dish. Sprinkle with grapefruit juice, cover with kitchen film and leave a couple of hours in the refrigerator.
- Remove it and sprinkle with orange zest, Maldon salt and pink pepper.
Serve with arugula and to enjoy.
