Winery: Masía Bach.
Tasting notes: Bright yellow color, very complex on the nose, displaying an aromatic range of white fruit (pear), bone (peach), bitter orange, chamomile and acacia honey, on a toasted background and subtle vanilla notes and American oak coconut. On the palate, it is a structured wine, smooth, with a great balance between sugar and acidity, with a note of bitter citrus at the end of the mouth.
Optimum service temperature: 8° C.
A pairing: Endivias con roquefort.
Ingredients: 2 endives, 200 gr. of Roquefort cheese, 100 ml. of cream for cooking thick, salt and pepper, butter and 4 slices of bread.
Elaboration:
- Melt butter to a consistency of ointment and add the roquefort crumbled.
- Beat well so that it is incorporated completely, helping us with a little cream to give it the desired texture. Salt and pepper to taste.
- Remove the leaves of the endives one by one and clean them with a damp cloth (do not wash them).
- Put on the inside of each sheet with the filling of roquefort.
- Serve accompanied by toasted bread triangles and warm toast.
