Tasting notes for Rosé Wine Señorío de Nevada:

Vista-Vinos-Covigran

Pink onion skin color with salmon color sparkles, clean and bright.

Nariz-Vinos-Covigran

On the nose we find aromas of strawberries, dairy products and scrub, on a somewhat balsamic background that gives it a lot of freshness.

Boca-Vinos-Covigran

It is also very fresh on the palate, persistent, broad, with volume thanks to its aging on lees and with good acidity.

Optimum service temperature:  10° C.

A pairing: Trucha meunière.

Ingredients: 1 trout, 50 gr. of clarified butter, 1 lemon, salt and pepper.

Elaboration:

- Open the trout in butterfly cut without scales or spines and add salt and pepper.

- Put it in a nonstick skillet with butter clarified on the side of the skin and cook about two minutes.

- Turn the trout over and cook it for two more minutes, add a little lemon juice.

- Remove the trout and in the same pan, add a little clarified butter and lemon juice and wait 20 seconds.

- Cover the trout with this mixture and serve with white pilaf rice.

What began as the dream of an immigrant originally from Valle de Lecrín who made his fortune in the Canary Islands and transformed his parents' old farmhouse into a winery, has now become one of the most important oenological complexes in Granada: Hacienda Señorío de Nevada . A winery in the French château style, surrounded by its vineyards and a modern 4 star hotel, groundbreaking, but in tune with the landscape. Their wines are among those that have received the most awards from the D.O. Granada.

Bodegas Señorío de Nevada are founded in 1996 and have an area of 21 hectares, extending at the foot of the Granada Alpujarra, at an altitude of 650 meters above sea level. They are located in an idyllic area for the cultivation of the vine, with land rich in minerals of the high mountain and a special microclimate, due to the extraordinary combination of climatic factors, typical of Sierra Nevada, the sea and the three rivers that cross zone.
