Elaboration: Fermented in French oak barrels.
Tasting note: Intense yellow color with golden reflections, clean and bright. The nose is intense, ripe exotic fruits, white flowers, aromatic herbs, complex, mineral, spicy and balsamic background. The palate is long, balanced, expressive, fruity memories and end of mouth spicy and very long.
Optimum service temperature: 10°-12° C.
A pairing: Ceviche de lubina.
Ingredients: A medium-sized sea bass, an onion, a ripe tomato, an avocado, a little coriander, several limes, several radishes, extra virgin olive oil, fine salt and a few sprigs of thyme.
- Cut the sea bass in taquitos and place them in a bowl. We bathe them with the juice half lemon juice and let marinate half an hour.
- Next, peel avocado, onion and tomato. We cut everything into very small pieces.
- We remove the fish and drain the lime, then add it to the vegetables in a bowl and stir to mix.
- Mix the mixture with a little fine salt and olive oil and decorate with lime skin, sliced radish and thyme.
