Tasting notes for White Wine Txomin Etxaniz:

Green yellow, bright and fine natural bubble.

On the nose, we find citrus and fresh apples. Mineral notes.

In the mouth, it is fresh and fruity, characteristic acidity and light carbonic.
Optimum service temperature: 5-8° C.
A pairing: Pimientos del piquillo rellenos de gambas.
Ingredients: 2 cans of piquillo peppers to fill, 3 boiled eggs, 8 large cooked prawns, 2 teaspoons of blue cheese (or cream cheese), 50 gr. roasted red peppers, mayonnaise sauce.
Elaboration:
- First we prepare the filling of the peppers. For this, in a bowl place the boiled eggs well chopped and then incorporate the peeled prawns and cut into small pieces.
- Add the red peppers roasted in pieces to the mixture and also the 2 teaspoons of blue cheese and a bit of mayonnaise (to taste).
- Mix well all the ingredients until a thick paste.
- Carefully and with the help of a small spoon, fill the piquillo peppers without breaking.
Serve cold and, if desired, garnish with some lettuce leaves at the base.
