Tasting note for Vino Blanco Castillo de San Diego 2021:
Yellow with greenish reflections that indicate his youth.
On the nose, tasty smell of white fruit accompanied by fresh citrus notes.
On the palate, it has a soft entry, tasty and elegant typical of the Palomino grape.
Optimum service temperature: 6°-8° C.
A pairing: Ceviche de lubina.
Ingredients: A medium-sized sea bass, an onion, a ripe tomato, an avocado, a little coriander, several limes, several radishes, extra virgin olive oil, fine salt and a few sprigs of thyme.
- Cut the sea bass in pieces and place them in a bowl. We bathe them with the juice of half a lime and let marinate half an hour.
- Next, peel avocado, onion and tomato. We cut everything into very small pieces.
- We remove the fish and drain the lime, then add it to the vegetables in a bowl and stir to mix.
- Mix the mixture with a little fine salt and olive oil and decorate with lime skin, sliced radish and thyme.
A fresh and delicious dish!
