Type of wood and time of passage: 6 months in French and American oak barrels.
Tasting notes Red Wine La Planta:
Clean, bright cherry colour with violet tinges.
Aromas of ripe black fruit and fresh red fruit combined with tones reminiscent of coffee, roasted coffee, liquorice, balsamic notes, vanilla and spices.
On the palate it is fresh and smooth, leaving a fleshy sensation of a very well-structured wine.
Optimum service temperature: 14º-16 C.
A pairing: Codornices escabechadas.
Ingredients: 4 quails, 1 onion, 1 carrot, 1 bay leaf, 2 cloves of garlic, 1 glass of olive oil, ½ glass of wine vinegar, a few sprigs of thyme or a teaspoon of dried thyme, 6 black peppercorns and salt.
Elaboration:
- Remove the head and intestines from the quails, wash and dry them.
- Season them and put them in a casserole dish in which they are just right.
- Add all the other ingredients to the casserole: the finely sliced onion, the thinly sliced carrot, the bay leaf, the garlic, 6 peppercorns, a teaspoon of thyme, the oil and the vinegar.
- Cover the pan, put it on the heat and leave it to cook over a gentle heat so that it does not boil for about three quarters of an hour, until the quails are tender.
