Tasting notes:

Intense color, bright purple red with cardinal hues.

The nose is deep, complex, concentrated and intense, dominated by aromas of ripe black fruits, mint, cocoa, mineral and a light background of toasted and caramelized tones. Very fine and complex aromas that evolve favorably throughout the tasting.

On the palate it has a fresh and friendly entry, giving way to an unctuousness and fleshiness that are very characteristic of this wine. Elegant, fresh and textured, ending with a long aftertaste where we remember again the primary fruity, spicy and caramelized aromas.
Optimum service temperature: 16º-18º C.
A pairing: Ternera a la barbacoa.
Ingredients: 1 piece of beef, 2 teaspoons cumin, 1 teaspoon coriander, 2 cloves garlic, 2 tablespoons lemon juice, red and yellow cherry tomatoes, oil, salt and pepper.
Elaboration:
- Bring the meat to room temperature and macerate with a mixture of cumin, coriander, garlic, two tablespoons of lemon juice and a drizzle of olive oil.
- Cover and let stand for ten minutes.
- Meanwhile, in a bowl, toss the tomatoes with olive oil, salt and pepper.
- Grill until the skin starts to burn. Remove and leave to rest.
- Place the meat on the barbecue and season.
- Keep for about three minutes on each side, depending on how you like it cooked.
- Cut into slices.
- Serve with the tomatoes and a few coriander leaves.
