Tasting note for Codorníu Prima Vides Brut Sparkling Wine:

Sight-Vinos-Covigran

Bright straw yellow colour. Fine, elegant bubbles that highlight the persistence of its crown.

Nose-Vinos-Covigran

Predominantly varietal aromas (apple, citrus, almond blossom) intertwined with nuances of ageing (toast, bread, pastries).

Mouth-Vinos-Covigran

Pleasant, fresh and balanced.

Optimum service temperature: 6° C.

A pairing: Ensalada de pochas crujientes con bacalao ahumado.

Ingredients: 400 g of boiled white beans, 1 green pepper, 1/2 red onion, 2 ripe tomatoes, 1 medium carrot, 1 bunch of fresh parsley, 80 g of smoked cod, 1 lemon, 1 teaspoon of Dijon mustard, 1/2 teaspoon of granulated garlic, vinegar to taste, 50 ml of extra virgin olive oil, thyme, salt and black pepper.

Elaboration:

- Shell and cook the beans gently so as not to break them. Set aside.

- Wash the carrot, parsley and pepper.

- Lightly peel the carrot with a vegetable peeler, empty the seeds and remove the inner filaments from the pepper.

- Chop all the vegetables into small pieces.

- Mix the vegetables and the beans in a bowl.

- Squeeze and strain the lemon juice. Whisk in a little vinegar to taste, olive oil, mustard, granulated garlic, thyme, salt and freshly ground pepper.

- Mix the salad well, add the cod cut into pieces or strips and season to taste.
