    The red wines are those that are elaborated from the must of red grapes fermented together with the solid parts of the grape (skins and pips). The aromatic and chromatic substances are in the skin of the grape, so it is necessary that it macerate in the mosto and provide olfactory nuances and color.

     

    Classification of red wines according to their aging:

    -Wine of the year or "cosechero": it does not have aging in barrel. It is bottled after being stabilized and clarified.

    -Roble: less than 6 months in barrel and no minimum rounding in bottle.

    -Crianza: 18 months of aging, of which at least 6 in the barrel and the rest in bottle.

    -Reserva: 36 months of aging, of which at least one year must be in barrel.

    -Gran Reserva: can only be marketed after 6 total years of aging (barrel + bottle), having had at least 18 months in barrels. At this level, only wines from exceptional harvests come, because the raw material must be impeccable to withstand a passage through such prolonged wood.

     

    There are other mentions such as "Vintage Selection", "Family Selection", "Author's Wine", etc., which are not regulated by law, then they can be used as the developer understands it better, although they usually indicate that they are wines of high ranges, elaborated with special care and attention.
