Winery: Bodegas Tábula.
Tasting note: Cherry color very covered with purple trim. On the nose, we find aromas of black fruit (blueberries, blackberries), and toasted notes marked by its almost constant contact with oak. There are notes of bitter cocoa, coffee and Chinese ink on a mineral and balsamic background (eucalyptus). On the palate it has a body, it brings us liqueur sensations in the passage being, at the same time fresh and alive, with some tannins softened by alcohol. In the retronasal, dairy and sweet spices (cloves, vanilla) appear. Long aftertaste.
Optimum service temperature: 16° C.
A pairing: Choto al ajillo.
Ingredients: 1.5 kg. meat cut goat, 2 dried peppers, 1 tablespoon of paprika, 3 heads of garlic, a glass of wine, extra virgin olive oil and salt.
Elaboration:
- Once the meat is cut sliced, brown it in a pan with olive oil and add salt.
- When it begins to brown, add all thegarlic but whole (without splitting or peeling) and, when they are, add the chopped dried peppers, the paprika and the wine.
- Remove, cover and leave on minimum heat until the meat tender. If necessary, we will add water during cooking.
