White wine Descomunal Verdejo with D.O. Rueda. Made only with grapes of the Verdejo variety. It is a young wine from Bodega Cuatro Rayas. It is a fun, delicate and light wine.

Tasting note for White Wine Lagartijo Rueda Verdejo:
It is pale golden color, clean and bright.
The nose is expressive and varietal, with the aniseed aromas of fennel, herbal touches, green apple and touches of banana and pineapple memories.
The palate is light, fresh and easy to drink, with good fruit in the center of the mouth and an end of medium persistence with tropical memories in retronasal.
Optimum service temperature: 8° C.
A pairing: Mejillones a la marinera.
Ingredients: 1.4 kg. of mussels, 3 tablespoons of wheat flour, 1 tablespoon of sweet paprika, 3 cloves of garlic, 2 tablespoons of parsley, salt, extra virgin olive oil and 600 ml. of water.
Elaboration:
- Clean the mussels under water by removing all possible dirt from inside and from the shell.
- Peel and chop garlic cloves. Put oil in a casserole and brown the garlic.
- Add the sweet paprika to the garlic and move a few seconds, add the flour and keep stirring until it is well mixed.
- We add the water. Let boil about 10 minutes until there is a consistent sauce.
- Put parsley and add the clean mussels. Cover the casserole and when the mussels are open, remove from the heat.
- Rectify salt if necessary and garnish with a little more parsley to taste.

Agrícola Castellana, in Rueda, is one of the most traditional wineries in the area, whose foundation took place in 1935. The Verdejo, Sauvignon Blanc, Viura, Palomino Fino and Tempranillo varieties work.
The verdejos elaborated by the winery are the result of the grapes coming from the own payments of the Vallisoletana province.
