Medium intensity garnet-cherry colour with violet glints.
On the nose, red fruits (raspberry), violet and liquorice flowers typical of varietals and spices with a certain roasted memory (vanilla, coconut).
It is a wine with a friendly entrance in the mouth, with light tannin, very polished. Balanced and fruity with an intermediate persistence.
Optimum service temperature: 14º C.
A pairing: Ternera blanca con salsa de cebolla confitada a la mostaza.
Ingredients: One kg of beef, 1 onion, great tasting mustard, olive oil, salt and pepper.
Elaboration:
- Cut the onion in julienne, cut it very fine, and place it adding a little salt at the base of the dish that we will put in the oven.
- Pour the mustard over the piece of beef, spreading it well over the whole surface. Brown the meat in a frying pan and place it on the onion base.
- Add five spoonfuls of olive oil and bake at 180º for 45 minutes.
- Leave to rest for 10 minutes and fillet the meat.
- Prepare the sauce by reducing the cooking juices and those released by the meat when cut together with the onion confit.
- Add salt and pepper to taste and serve the meat bathed in the onion confit sauce.
We are ready to enjoy this delicious meat.

Bodegas Bilbaínas was one of the first investments of the Codorníu Group outside Catalonia. A winery of archachonese architecture (brought by the Bordelais to La Rioja at the end of the 19th century after the epidemic of phylloxera in France).
It is located in the emblematic Barrio de la Estación de Haro, which was renovated a little over a decade ago. Under the Viña Pomal brand, the most classic and well-known reds and whites of the winery are produced. The vineyards are in an area where the Mediterranean and Atlantic influences converge in La Rioja, which gives their wines a unique character.
