A pairing: Ostras al horno.
Ingredients: 8 oysters, 1 onion, 1 clove of garlic, parsley, Iberian ham, butter, salt, 1 glass of white wine.
Elaboration:
- Place the others as you open them in an ovenproof dish.
- Peel the onion and garlic and chop them very finely.
- Poach the garlic and onion. When they start to become tender, add the glass of white wine.
- The garlic, onion, butter and wine will create a sauce that will give the oysters an impressive flavour. When the wine has reduced, remove from the heat.
- Place a spoonful of this sauce on top of each oyster, and a squeeze of lemon to enhance the fruity flavour of the wine.
- Place in the oven at 180º for about 5 minutes.
Serve and enjoy.
Bocopa arose at the end of the 80s, the fruit of the union of several Alicante cooperatives that bet for the sale of bottled wine and its own brand.
It has been a recurrent phenomenon in the Spanish Levante, where it has been over half a century of selling bulk to produce bottled wines with great value for money that have been very well received by consumers. Their sparkling wines were a "revolution" at the time and they are still very appreciated wines and a striking image.
