The red wines are those that are elaborated from the must of red grapes fermented together with the solid parts of the grape (skins and pips). Classification of red wines according to their aging:
-Wine of the year or "cosechero": it does not have aging in barrel. It is bottled after being stabilized and clarified.

-Crianza: 18 months of aging, of which at least 6 in the barrel and the rest in bottle.
-Reserva: 36 months of aging, of which at least one year must be in barrel.
-Gran Reserva: can only be marketed after 6 total years of aging (barrel + bottle), having had at least 18 months in barrels. At this level, only wines from exceptional harvests come, because the raw material must be impeccable to withstand a passage through such prolonged wood.
