Type of wood and time of passage: 70% of the wine passes 22 months in new French oak barrels and the rest, in French oak barrels of two uses.
Tasting notes for Red Wine Áster Crianza:

Pillory color, very covered, denoting youth in its ruby edges.

We find a lot of black fruit (blackberries, plums), coffee, maraschino, and licorice stick and cigar box. The palate has a sweet attack and a powerful step, with fresh fruit despite being a ripe wine.

The tannins of the fruit and the barrel are sweet, but the tannic structure is very well armed. It remains long in the mouth after the drink.
This wine was a bet in the Ribera del Duero, at the end of the 90s, of Rioja firm La Rioja Alta and it has to be said that it was a winning bet.They managed, from the first vintage, to give this wine the typicity of the Ribera. For him, they chose the musts coming from the El Caño farm, which seemed the most suitable for the development of a breeding.
Optimum service temperature: 14° C.
A pairing: Codornices con cerezas.
Ingredients: 4 quail, 250 gr. of cherries, 50 gr. of butter, 1 dram of brandy, salt and pepper.
Elaboration:
- Clean the quail and tie them with a kitchen thread.
- Season them with salt and pepper, spread them with butter and put them over medium heat to cook in a covered clay pot so that they can be done before, turning them from time to time.
- Before finishing the cooking, add the cherries and brandy and cook for 5 more minutes.
- Remove the quail thread and serve.
