Tasting notes for Laudum Young Chardonnay White Wine:
Sustained pink with strawberry iridescence.
Very intense, fresh. Rich in fruity aromas, strawberry, mango, banana, etc., which envelop us in new exotic sensations.
Fresh and tasty attack. The evolution in the mouth is aromatic and warm.
Optimum service temperature: 8°-10° C.
A pairing: Salpicón de marisco.
Ingredients: 1 spring onion, 1 green pepper, 1 red pepper, natural mussels, natural cockles, 1 leg of cooked octopus, 100 gr. of cooked prawn, 100 gr. of cooked shrimp, crab sticks, extra virgin olive oil, wine vinegar and salt.
Elaboration:
- Cut the onion and peppers very thinly and in taquitos, to taste.
- Put the cockles in a frying pan and in a casserole the mussels to open and make it easier to take off their shell.
- Cut the leg of cooked octopus, the crab sticks and then peel the prawns and prawns.
- We mix everything and season it with olive oil and vinegar. When putting salt, we have to be careful because we know that shellfish already provides salt, maybe it needs a little but not much.

Bocopa arose at the end of the 80s, the fruit of the union of several Alicante cooperatives that bet for the sale of bottled wine and its own brand.
It has been a recurrent phenomenon in the Spanish Levante, where it has been over half a century of selling bulk to produce bottled wines with great value for money that have been very well received by consumers. Their sparkling wines were a "revolution" at the time and they are still very appreciated wines and a striking image.
