Red Wine Ederra Roble from Bodegas Bilbainas. Ederra Roble Joven is the purity of the Tinto Fino combined with the elegance of the Cabernet Sauvignon. Fruit, freshness and balance as a tribute to the essence of Ribera del Duero.

Intense purple red colour with bluish tones.
Smells of fresh red fruit with fine nuances of vanilla from the barrel.
Sweet and balanced wine.
Optimum service temperature: 14º C.
A pairing: Paletilla de cordero con setas.
Ingredients: One shoulder of lamb cut into slices, 1 carrot, 1 onion, an assortment of mushrooms (seasonal, canned or dehydrated), flour, black pepper, olive oil and a glass of white wine.
Elaboration:
- Seasoning the meat and flour. Fry in a pan with the olive oil and set aside.
- Chop the onion and carrot, put it in a casserole with the olive oil and sauté it. When it is well cooked, add the wine and let the alcohol evaporate.
- Then, add a glass of water and cook for 15 more minutes.
- Grind to obtain a sauce and add the assortment of mushrooms: if they are fresh, you just have to clean them; if they are preserved, drain them well before; and if they are dehydrated, hydrate them before in water or white wine).
- Add the reserved pieces of lamb and let cook over medium heat for 30 more minutes.

Bodegas Bilbaínas was one of the first investments of the Codorníu Group outside Catalonia. A winery of archachonese architecture (brought by the Bordelais to La Rioja at the end of the 19th century after the epidemic of phylloxera in France).
It is located in the emblematic Barrio de la Estación de Haro, which was renovated a little over a decade ago. Under the Viña Pomal brand, the most classic and well-known reds and whites of the winery are produced. The vineyards are in an area where the Mediterranean and Atlantic influences converge in La Rioja, which gives their wines a unique character.
