Tasting note White Wine Vinos del Paseante "La Duda": 

It shows a clear and bright straw yellow color.

Aromas of fruit blossom and white peach appear.

Again we find notes of white peach and apricots on an elegant fusion of fine textures. The finish is citrusy, clean, long and elegant.

Optimum service temperature:  9º C.

A pairing: Mejillones con mantequilla de ajo.

Ingredients: 5 eggs, 50g of desalted cod, chopped parsley, piquillo peppers.

Elaboration:

- Put 4 eggs on a plate and only the yolk of the 5th. The last yolk will give an extra creaminess. Beat well, without adding salt for the moment.

- In a high casserole dish, add the beaten mixture. Put it over medium-high heat and stir vigorously with a wooden spoon without stopping. If you see that the temperature rises too much, remove from the heat for a moment, stirring all the time. When it returns to a suitable temperature, return it to the heat.

- After a couple of minutes without stopping stirring at any time, you will see that it begins to thicken. At the end, it should be curdled, but you will also see some of the egg yolk still not completely set.

- At this point, remove from the heat and add the cod and peppers.

- Now add the salt and a small splash of olive oil, which will give it the final touch.

- Mix a little to integrate all the ingredients and put everything immediately on a plate. If the stir-fry, when added, drops a little but stops immediately, it is ready.
