Tasting note of Sweet White Wine MR 2015:

Vista-Vinos-Covigran

Golden yellow color of low-medium intensity.

Nariz-Vinos-Covigran

On the nose, orange blossom, honey and spices such as cinnamon and vanilla, citrus herbs such as orange peel and herbal nuances.

Boca-Vinos-Covigran

On the palate, tasty and sweet without being cloying, excellent acidity with a point of freshness. Citrus and fruit notes (peach, pear) with balsamic notes.

Optimum service temperature: 7° C.

A pairing: Huevos rellenos con salmón y aguacate.

Ingredients: 1 small lettuce, 6 cooked eggs, 100 gr. of smoked salmon, 1 avocado, 20 gr. of capers, egg mayonnaise (homemade or processed), extra virgin olive oil, vinegar and salt.

Elaboration:

- Wash the lettuce and keep it dry.

- Peel and cut the boiled eggs in two halves (cut transversely) and separate the yolks from the whites, being careful not to break them. Clear booking and buds separately.

- Cut the salmon finely into pieces and reserve in a bowl. Peel the avocado, remove the bone and cut into small pieces by adding it to the bowl next to the salmon. Crush with a fork and add the yolks mixing everything well.

- Add 2 tablespoons of mayonnaise to the bowl with the salmon and avocado and mix well.

- Fill in the egg whites you had reserved one by one with care so they do not break.

- Next, cut the lettuce into thin julienne and season to taste with extra virgin olive oil, salt and vinegar.

- To serve, spread the lettuce in a flat dish, place the stuffed eggs on it and decorate with a little more mayonnaise and some capers.

In 1994, Pablo Eguzkiza and Telmo Rodriguez together with a third winemaker made a wine from Garnacho, from old vineyards in the Navarre glass. The wine was called Alma. This is the start of the project, which in its origins was called La Granja Wine Company. A name that was all a declaration of intentions: it was clear that the company would make more wines and that there was a tribute to La Granja, the famous glass factory, witness of an exceptional Spanish craftsmanship, now almost disappeared.

Since its inception, the fundamental argument of the Telmo Rodriguez Wine Company is the use only of autochthonous varieties of original zones. This philosophy contrasts then with the boom of the implantation of foreign varieties, practically in all the Spanish vineyard.

Another initiative to which the project wants to pay special attention, also from its origins, is the recovery of forgotten vineyards.
