Tasting note for Legaris Verdejo:

Sight-Vinos-Covigran

In the bottle it specifies that it is 100% Verdejo, but it contains a small percentage of Sauvignon Blanc, less than 10%, so the law allows it to be presented as a single variety.

Nose-Vinos-Covigran

This small contribution of sauvignon gives it nuances of dry rose petals surrounding the aromas of white fruit, citrus (grapefruit) and tropical notes of pineapple and banana, along with the typical aniseed of Verdejo.

Mouth-Vinos-Covigran

It is wide, with good power but with a delicate palate, excellent acidity and a complex finish with memories of the sensations we had in the olfactory phase.

Optimum serving temperature: 10º-12º C.

Pairing: Soldiers of Pavia.

Ingredients: 500 gr. of desalted cod, 1 egg, 100 gr. flour, 1 teaspoon yeast, 50 ml. of beer, virgin olive oil, garlic and parsley.

Elaboration:

- Cut the cod fillets into cubes.

- To prepare the batter, chop a clove of garlic into tiny pieces, beat an egg, add half the flour, yeast and beer and beat with a few rods until smooth.

- Afterwards, the rest of the flour is incorporated until obtaining a thick cream with which we will coat the cod slices. If the cream is too thick, add a little more beer. Sprinkle with a little parsley and stir.

- Put plenty of oil to heat in a pan and coat each portion of cod, frying it for about two minutes on each side until it is golden brown and crisp on the outside.

Legaris is a modern winery, belonging to the Grupo Codorníu located in La Seca (Valladolid). The technical direction, both in the field and in the winery, comes from the hands of the winemaker who produces reds from the same brand in the Ribera del Duero.

The planting of the first vines took place in 1999. At present, the winery cultivates the Tinto Fino (Tempranillo) and Cabernet Sauvignon varieties and has almost 100 hectares of vineyards.
