Red wine Félix Callejo, special wine of Bodegas Félix Callejo with D.O. Ribera del Duero. Félix Callejo is made from a very strict selection of Tempranillo plots, with grapes that have a great concentration of aromas and a distinct character from the rest of the Callejo vineyard.

Type of wood and time of passage: The ageing is prolonged in the same barrels for 15 months in French oak casks.

Tasting note of Red Wine Majuelos de Callejo:

Vista-Vinos-Covigran

Bigarreau cherry colour with garnet rim.

Nariz-Vinos-Covigran

Intense aromas of ripe fruit, blueberries, spices, rosemary, clove, balsamic and oak.

Boca-Vinos-Covigran

Powerful and tasty. Ripe tannins and a long, lingering finish.

Optimum service temperature: 16° C. 

A pairing: Medallones de venado.

Ingredients: 1,500 gr. of venison sirloin, 12 prunes without bone, 1 sprig of thyme, 350 ml. of beef broth, a pinch of salt and pepper, ¼ spoon of ground cinnamon, ¼ teaspoon of ground clove, 125 ml. of red wine (Protos Rva.), 50 gr. of butter, 1 chopped onion and 1 clove of chopped garlic.

Elaboration:

- Mix the red wine, the plums, the thyme and the broth and bring to a boil for 3 minutes. Remove, cover and reserve.

- Cut the sirloin into medallions. Mix the salt, pepper, cinnamon and cloves and sprinkle over the meat.

- Melt the butter over medium-high heat and brown the medallions for 4 minutes on each side. Remove them from the pan and reserve them hot.

- In the same skillet sauté the onion and garlic, without taking color and add the wine mixture.

- Bring to a boil, lower the heat and reduce the liquid in half. Serve the medallions washed with the sauce.

Félix Callejo was born in Sotillo de la Ribera, in a family with a long tradition in the world of wine. Both his grandfather Faustino and his father Felix owned vineyards, in addition to being "wine brokers", a kind of commercial agent, in charge of selling the items of wine made in Sotillo.

At age 16, he had to assume the reins of the family business after the death of his father. Restless by nature, he always had the dream of making his own wine.

The reward comes in 1989, when the first harvest comes to light. From the beginning, its maxim has been to make known the greatness of our wines, making trips around the world, from Japan to America, attending fairs, contacting new customers. He has been a pioneer, always with his bottle under his arm, when introducing Ribera del Duero wines, in countries where there was hardly any wine culture.
