Tasting notes for White Wine Basa 2020:
On the nose, of high average intensity, its intense varietal aromas, notes of fresh fruit and touches of white flowers stand out.
In the mouth, it has a fresh and expressive step, marked by a good acidity. It is tasty and balanced.
Optimum service temperature: 8°-10° C.
A pairing: Merluza a la gallega.
Ingredients: 800 gr. of hake slices, can be fresh or frozen, 4 medium potatoes of the same size, 6 tablespoons of extra virgin olive oil, 1 tablespoon of sweet paprika, 1 large onion, 4 garlic cloves rolled, 1 liter of water, 1 bay leaf and half a teaspoon of salt.
- In the first place, we wash the potatoes but we do not remove the skin, because when we remove them we favor to break them during the cooking. Then in a pot add the liter of water with the bay leaf and half a teaspoon of salt and the onion cut into pieces. We add the potatoes to the water and cook for 20-30 minutes.
- Puncture the potato with the fork to see if it is tender. When you notice that they are a bit short, we take the potatoes out of the pot, peel them and cut them into thick slices. We add them again to the pot and we also add the hake slices. We cook about 10 minutes over medium heat.
- In a pan add olive oil and garlic. We brown them for about two minutes. Then add the paprika and put out the fire. Drain the hake and potatoes. We put them in a dish and pour garlic and paprika sauce.
