Winery: Bodegas Protos

Ageing time: Ageing on its own lees in the same barrels for approximately 7 months. Aged in the bottle for 17 months.

Tasting note for White Wine Protos Verdejo Reserva: 

Vista-Vinos-Covigran

Straw yellow colour, a little brighter than the young Verdejo, due to the year and a half of ageing. Bright and clean.

Nariz-Vinos-Covigran

Aroma of high intensity, with notable complexity due to the perfect blend between the fruit of the variety (herbaceous, tropical, slightly citric) and the soft toast of the barrels (vanilla and fine notes of pastries).

Boca-Vinos-Covigran

On the palate it is a dry, oily wine, with volume and structure, which at the same time retains freshness thanks to its good acidity. Long, expressive and persistent.

Optimum service temperature: 7º-8ºC.

A pairing: Almejas a la marinera con gambas.

Ingredients: 1 kg. of clams, 250 gr. of shrimp, 1 large onion, 3 cloves of garlic, 1 tablespoon of flour, 1 cayenne pepper, 1 bay leaf, a glass of white wine, extra virgin olive oil, sweet paprika, fresh parsley, salt, vinegar.

Elaboration:

- The first step is to clean all the clams well. We will put them in a drainer and pass them under the tap of cold water. Then we will put them in a container with water and salt, a splash of vinegar and let them be cleaned.

- We put olive oil in a pan and heat. Peel the onion and chop it very small next to the garlic and toss everything in the pan stirring it until the onion is poached. Meanwhile we will peel and clean the prawns well and reserve them.

- Add the bay leaf, the teaspoon of sweet paprika, the cayenne pepper and the flour to the pan. We move everything so that it mixes well and we add the white wine next to the reserved prawns, mix well and let it cook.

- When the clams are fully open the dish will be ready to eat. We will let it rest for about five minutes outside the heat source so that it does not continue to cook and we will be able to serve it.

Protos, a Greek word that means "first", was, in effect, the first winery to produce what 50 years later would be the Denomination of Origin Ribera del Duero. In recent times, and like other wineries in the area, found in Rueda the ideal place to make a white wine (not allowed in the D.O. Ribera del Duero) and chose La Seca (Valladolid), known as "the cradle of Verdejo."

It is one of the few wineries of the Denomination that elaborate rose, since most of the wineries turn into the production of red wines. After the harvest, bunches of grapes are stripped (separate the berries of the raspon or woody part of the cluster) and crushed to stay macerated with the mosto 16 hours, this maceration gives it its beautiful color and allows extracting all the aromas of the skins.
